Theme: Let's test aging and taste. Is older really better?

When spirit comes from the still it is clear and should carry the hallmarks of the distillery with it. We want the best barley, perfectly milled to the right consistency. The mash needs to be spot on, and then we just add yeast to ferment for the ideal length of time so it is ready for the distillation. One distillation is in the copper wash still, and the second in is the copper spirit still. From there it might be aged as little as two years, or as much as forty years or more.
